2 big handfuls of fresh arugula - Blanched
Enough top quality olive oil for desired consistency
Parmigiano Reggiano sliced thin
1 clove garlic - crushed
S & P
lemon juice/zest (optional)
Throw all in a food processor until all incorporated

Dinner tonight was scrumptious yet so simple. Mixed greens with olive oil, honey crisp apples, onions fried up in rendered bacon fat along side 2 eggs sunny side up.

I also made a gravadlax over the weekend. First attempt at something like this also outside of my workplace. Turned out good after just a 36 hour cure.

3rd course was a 2 layer sponge cake with cherry filling. Icing was a basic buttery icing. This was my first attempt at making a cake from scratch on my own… I’m definately NOT a pasty, dessert kind of guy… turned out good though

2nd course was Salmon acqua pazza. Basically salmon poached in water that had been reduced with tomato’s, garlic, onions, and basil with a little bit of basil oil. Turned out awesome.

Valentines dinner started with a mixed greens salad with pears, dried cranberries, and a honey sesame dressing
